A wet brine is simple in principle — dissolve salt, and usually a little sugar, in water, then soak the meat — but getting the ratio and the timing right by eye is surprisingly easy to botch. Too little salt and the brine barely does anything; too much and the meat turns unpleasantly salty and can even toughen. Too long in the brine and delicate proteins turn spongy or mushy. Why 5% Salt by Weight of Water
A brine in the roughly 3–6% salt-by-weight range is the common professional and home-cook standard: strong enough to season through the meat and improve moisture retention during cooking, gentle enough not to overpower it. Working in grams of salt per gram of water — rather than tablespoons per cup — matters because salt volume varies a lot by type: a level tablespoon of fine table salt weighs noticeably more than a level tablespoon of coarse kosher salt, so a recipe written in spoons alone can be badly off if you swap salt types without adjusting. The calculator starts from grams and then converts to both table-salt and kosher-salt spoon measurements, so you can use whichever salt is in your pantry accurately.
Worked Example: A Whole Chicken in One Gallon
Feed the calculator a 5-pound chicken, one gallon of water (16 cups), and the default 5% salt strength, and it returns 189.3 grams of salt — that is 10.5 tablespoons of table salt, or 12.6 tablespoons of kosher salt, since kosher salt is lighter by volume and takes more spoonfuls to hit the same weight. With sugar included at the tool’s default of half the salt weight, that adds 94.6 grams of sugar. For brining time, the calculator’s default of roughly one hour per pound of meat suggests 5 hours for this bird — a reasonable window for a whole chicken, long enough to season and improve moisture without oversalting or turning the texture spongy.
Worked Example: A Whole Turkey in Two Gallons
Scale up to a 14-pound turkey in two gallons of water (32 cups) at the same 5% strength and the numbers roughly double, as you would expect from doubling the water: 378.6 grams of salt (21 tablespoons table salt, or 25.2 tablespoons kosher), and 189.3 grams of sugar. The suggested brine time comes out to 14 hours at the default rate — comfortably an overnight soak, which lines up with common turkey-brining guidance of roughly 12 to 24 hours for a bird this size.
Smaller Cuts Need Less Time, Not Just Less Salt
It is tempting to assume a smaller cut just needs a smaller version of the same ratio, but timing scales with weight too, and delicate items need an adjusted rate rather than the default hour-per-pound. Two pounds of pork chops in 4 cups of water at 5% salt, no added sugar, comes out to 47.3 grams of salt (2.6 tablespoons table salt) and a suggested 2 hours at the default rate. For something as delicate as a pound of shrimp, the default hour-per-pound rate would badly oversalt and toughen the flesh — dialing the rate down to a quarter hour per pound in the calculator gives a much shorter 30-minute soak for 1 pound of shrimp in 2 cups of water, which is far closer to what a delicate protein like shrimp actually needs.
Worked Example: A Pork Loin in Half a Gallon
A 4-pound pork loin brined in 8 cups (half a gallon) of water at the standard 5% strength comes out to 94.6 grams of salt — 5.3 tablespoons of table salt, or 6.3 tablespoons of kosher — plus 47.3 grams of sugar with the default sugar included. Suggested brine time at the default rate is 4 hours, short enough to fit into an afternoon before a weekend cook, and appropriate for a lean, quick-cooking cut like loin that would turn spongy after an overnight soak the way a tougher, larger cut can tolerate.
Wet Brine vs. Dry Brine
Everything above describes a wet brine — meat submerged in a salted liquid. A dry brine skips the water entirely: you apply a measured amount of salt (and often other seasoning) directly to the meat's surface and let it sit uncovered or loosely covered in the refrigerator, where the salt draws out surface moisture, dissolves into it, and is then reabsorbed back into the meat over several hours to a day or more. Dry brining seasons more deeply than a quick wet brine for the same time and produces a drier, more receptive surface for a good bark or crisp poultry skin, at the cost of being slower to season all the way through on a very thick cut. Many cooks dry-brine poultry specifically for the skin benefit and wet-brine leaner cuts like pork loin or fish where moisture retention matters more than skin texture.
Injecting as a Complement, Not a Substitute
A meat injector drives a seasoned liquid directly into the interior of a thick cut, which reaches muscle a brine's surface-in diffusion may not fully penetrate within a practical soak time, particularly on something as large as a whole turkey or a thick pork shoulder. Injecting and brining solve overlapping but not identical problems, and some cooks use both together on a large cut — a shorter brine or dry brine for the surface and overall seasoning, plus an injection for guaranteed moisture and flavor deep in the center. If you inject, use the same cross-contamination care as with any raw-meat liquid: clean the injector fully between uses and never inject with a liquid that has already been used on other raw meat without treating it the same as a used brine.
Cross-Contamination: The Part a Ratio Can’t Fix
No amount of getting the salt percentage right matters if the brine itself becomes a contamination risk. A brine that has held raw poultry or meat carries whatever bacteria was on that meat’s surface, now suspended throughout the liquid. Never reuse that liquid as a baste or finishing sauce on the cooked meat without first bringing it to a full rolling boil to kill off what it picked up — and most cooks simply discard used brine rather than bother. Brine in a food-grade, non-reactive container, fully submerged, and keep the whole setup at or below 40°F the entire time — in the refrigerator, or in a cooler packed with ice if the container is too large to fit. A brine sitting at room temperature is a brine spending hours in the bacterial danger zone, regardless of how carefully you measured the salt.
Rinse, or Don’t?
A light rinse and pat-dry after brining removes surface salt and helps skin crisp rather than steam on poultry, but it will not remove salt that has already migrated into the meat — that part is set once the soak is done. Pat the surface fully dry before it goes on the smoker either way; a wet surface takes longer to form bark and can produce more of the thick white smoke you are trying to avoid as moisture flashes off unevenly.
When to Skip the Brine
Not every cut benefits from brining. Fatty cuts with plenty of internal moisture and a long cook ahead of them — pork shoulder and brisket in particular — are often dry-rubbed instead, since the long, slow cook and the fat cap do most of the moisture-retention work a brine would otherwise provide, and a wet brine can interfere with bark formation on a cut that is already going to spend half a day building one. Brining earns its keep most on lean, quicker-cooking proteins that dry out easily: whole poultry, pork loin, and fish.
Use a Non-Reactive Container
Brine is both salty and often acidic, and some reactive metals — uncoated aluminum in particular — can react with that combination over a long soak, affecting flavor and potentially the container itself. Stick to food-grade plastic, glass, stainless steel, or a purpose-made brining bag or bucket, all of which stand up to a long salt soak without any of that concern, and are also easier to fully clean and sanitize between uses than something with a reactive or porous surface.
Never Brine Meat That Is Still Frozen
A brine works by moving salt into the meat through liquid contact, which cannot happen properly through ice, and a partially frozen cut sitting in liquid at refrigerator or cooler temperature also spends longer than it should in a state where its surface is not reliably cold enough throughout. Thaw meat fully in the refrigerator first, then brine it — combining thawing and brining into a single step does not save real time and adds an avoidable food-safety variable to the process.
Adjusting Salt Strength to Taste, Within Reason
The default 5% salt-by-weight figure is a well-tested middle ground, but the calculator accepts a range from 1% up to 15% for cooks who want a lighter or more assertive cure. Going much below about 3% starts to lose most of the practical benefit of brining at all, while pushing much above 6% risks a noticeably salty result unless you are specifically working toward a cure rather than a standard flavor brine. Adjust within a few points of the default rather than jumping to an extreme, and taste-test a small brined batch before committing a whole turkey to an unfamiliar ratio.
