Reading the two temperatures

Every row separates two numbers that BBQ writing constantly blurs together: the safe minimum is the internal temperature at which the cut is microbiologically safe to eat, full stop. The pull temperatureis where the calculators actually tell you to take it off — and for whole-muscle beef, pork, and lamb, those two numbers are frequently very different. A brisket is safe at 145°F long before it’s edible; it needs roughly another 58°F of cooking, up to about 203°F, before the collagen has broken down enough to slice or pull. That gap is a texture decision, made well past the safety line, never a reason to second-guess the safety line itself.

Poultry works differently. Chicken and turkey have a hard safe floor of 165°F with no equivalent collagen payoff for going higher in the breast, so the table pulls them right at that floor. Fish is similar — 145°F and it flakes; there is no reason to push it further. Ground meat carries its own floor of 160°F for beef and pork because grinding spreads any surface bacteria through the whole mass, which is why it isn’t in this table at all — it doesn’t have a “cut” or a per-pound cook time the way a roast does.

The time-per-pound and restcolumns come from the same reference rates the Smoking Time Calculator uses at a 225°F chamber temperature, and they scale differently for a hotter pit — use the calculator directly for a specific weight and temperature. The smoke intensity column borrows its wording directly from the wood-amount calculator’s own light/medium/heavy labels, so a “heavy” cut here is exactly the same “heavy” you’d pick on that calculator.

Frequently Asked Questions

Why do some cuts have a pull temperature far above their safe minimum?

Whole-muscle beef, pork, and lamb are safe to eat at 145°F. But tough, collagen-rich cuts like brisket, pork shoulder, and beef short ribs are cooked to roughly 203°F anyway — not for safety, but so the connective tissue and fat render into something that slices or pulls apart cleanly. Everything past 145°F on those rows is a texture decision, not a safety one.

Why are chicken and turkey pulled at exactly their safe minimum, with no higher option?

Poultry breast meat doesn't have tough connective tissue that benefits from extra cooking the way brisket does — pushing it well past 165°F just dries it out. So this table pulls poultry at the safe floor itself. (Dark meat like thighs is more forgiving and often taken higher for texture, but that's a separate number from the whole-bird safe minimum shown here.)

Is the 'time per pound' column something I can set a dinner time by?

Treat it as a planning estimate, not a countdown. It's an average rate at the reference 225°F chamber temperature, and every real cook varies with wind, humidity, the fire, and the individual piece of meat — large cuts in particular can plateau for hours during the stall. Use the number to plan when to start, then finish by internal temperature with a thermometer, never by the clock.

Where does the smoke-intensity column come from?

It's the same light/medium/heavy bracket used by the wood-amount calculator, matched to each cut the way that calculator's own labels describe them — light for delicate fish and poultry, medium for pork, heavy for beef and brisket. It's a starting point, not a rule; adjust to taste.
