The Stall, Explained: Why the Temperature Stops Climbing (and When to Wrap)
Somewhere in the middle of a long brisket or pork shoulder cook, the internal temperature that had been climbing steadily suddenly stops moving — sometimes for two or three hours at a stretch. New smoker owners often assume something has gone wrong: the fire has died, the thermometer is broken, the meat is somehow stuck. It has a name, a cause, and a well-understood fix, and none of the three problems above is usually the real one.
What the Stall Actually Is
The stall is evaporative cooling, the same physics that makes you feel cold stepping out of a pool into a breeze. As a large cut heats up, moisture migrates to the surface and evaporates, and that evaporation carries heat away from the meat at almost exactly the rate your smoker is putting heat in. The two effects roughly cancel out, so the internal temperature plateaus even though the fire is working exactly as it should. It typically shows up somewhere in the 150–170°F internal range and can last anywhere from thirty minutes to several hours depending on the cut’s size, its humidity, and the air moving across your smoker’s chamber.
It Is Already Well Past the Safety Line
The single most important thing to understand about the stall is where it sits relative to food safety: whole-muscle beef and pork are safe at 145°F, and the stall happens at 150°F and above. By the time a brisket or pork shoulder stalls, it has already cleared its safe minimum with room to spare. Everything that happens from the stall onward — whether you ride it out, wrap it, or how long it takes — is entirely a texture and timing question. There is no safety reason to panic, rush, or crank the heat during a stall.
Why the Time Estimate Already Includes It
It can look like the stall “breaks” a time estimate, but it does not — it is already baked into the average rate the Smoking Time Calculator uses. A 12-pound brisket at 225°F comes out to an estimated 15-hour cook, a rate of 75 minutes per pound. That 75 minutes per pound is an average across a cook that includes a faster climb early on, a flat stall in the middle, and a faster finish once the stall breaks — not a claim that the temperature rises smoothly and linearly the entire time. If your particular brisket stalls for three hours instead of one, the total cook time moves accordingly; the average rate already assumes some amount of stalling happens, it just cannot predict exactly how long yours specifically will run.
Three Ways to Handle It
You have three real options once the stall sets in, and none of them is wrong — they trade off differently between bark, moisture, and total time. Ride it out unwrapped and you get the best bark, since the surface keeps drying and building crust the whole time, at the cost of the longest total cook time. Wrap in foil (the “Texas crutch”) traps steam against the surface, breaking the evaporative cooling almost immediately and pushing the cook through the stall fast — but that trapped steam softens the bark you have built so far, sometimes into a slightly soggy crust. When to Make the Call
There is no single correct internal temperature to wrap at, but most pitmasters watch for the plateau itself rather than a fixed number — if the temperature has held flat or nearly flat for 45 minutes to an hour somewhere in that 150–170°F band, that is your signal, not a specific degree reading. Wrapping earlier shortens the total cook more but sacrifices more bark; wrapping later or not at all preserves the most bark at the cost of time. What Wrapping Doesn’t Change
Wrapping affects how fast the meat gets through the stall and how the bark turns out — it does not change the target you are cooking to. A wrapped or unwrapped brisket still needs to reach roughly 203°F, checked with a thermometer probed until it slides in with no resistance, before it is actually tender enough to slice or pull; wrapping does not let you pull it earlier at a lower temperature and expect the same texture. Does Spritzing Make the Stall Worse?
Spritzing the surface with water, juice, or diluted vinegar during a long cook adds a little moisture back to a drying surface and can help smoke adhere, but it also adds more liquid available to evaporate, which some cooks worry extends the stall. In practice the effect is minor compared to the stall's main driver — the meat's own internal moisture migrating outward — and the bark benefits of an occasional light spritz generally outweigh a small amount of extra time. If you are on a tight schedule and the stall is already dragging, easing off spritzing and moving toward a wrap is a more effective lever than cutting out spritzing alone.
Do Smaller Cuts Like Ribs and Poultry Stall Too?
The stall is most dramatic on large, dense cuts like brisket and pork shoulder because they hold enough surface moisture for evaporative cooling to meaningfully offset incoming heat for hours at a stretch. Thinner cuts like a rack of ribs, a whole chicken, or a pork loin can show a brief, shallow plateau for similar reasons, but it rarely lasts long enough to be worth a special wrapping strategy on its own — their smaller mass and higher surface-to-volume ratio means they simply move through that same temperature range faster than a 12-pound brisket ever could.
A Stall That Won’t Break
If a stall runs unusually long — well past three or four hours with no movement at all — check your fire before assuming the meat is simply being stubborn. Weather and Humidity Change How Long the Stall Runs
Ambient humidity affects how fast surface moisture on the meat can evaporate, which is the entire mechanism behind the stall — on a humid day, evaporation slows down and the stall often runs shorter than it would on a dry day, where moisture leaves the surface faster and the cooling effect is stronger and more sustained. Wind has a similar effect by continuously carrying away the humid boundary layer right at the meat's surface, which is part of why an exposed smoker on a breezy day can show a longer, more pronounced stall than the same cook run in a sheltered spot.
Why Some Cooks Never Wrap at All
A meaningful number of experienced pitmasters run their entire cook unwrapped from start to finish, prioritizing maximum bark over minimizing total time, and simply plan their schedule around a longer cook rather than intervening at the stall at all. This is a completely valid choice, not a sign of stubbornness — on a day with no hard deadline, riding out the stall unwrapped costs you nothing but time you already had available, and it consistently produces the firmest, most developed bark of the three approaches discussed above.
Check the Fire, Not Just the Meat, During a Long Stall
Because a stall can run for hours, it is a natural point in a cook to also confirm the fire itself is still behaving — a good moment to glance at the grate-level thermometer and confirm the chamber is actually holding its target rather than assuming a flat meat temperature is purely the stall's doing. A stalled internal reading alongside a chamber temperature that has quietly drifted down is a different problem than a normal stall with the pit still holding steady, and telling the two apart early saves you from waiting out what is actually a fire problem in disguise.
What Experienced Cooks Check Alongside the Thermometer
Once a brisket or shoulder is approaching its pull temperature, many pitmasters supplement the thermometer reading with a simple feel test: sliding the probe in and out of the thickest part should meet almost no resistance, the way it would sliding into softened butter, rather than the firmer resistance of a probe going into raw or under-rendered meat. This is a texture check that confirms what the number already suggests, not a replacement for the number itself — use it alongside the thermometer reading, not instead of it, especially anywhere near a hard safety floor like poultry's 165°F.
Resting After a Wrapped Cook
Whether wrapped in foil, butcher paper, or not wrapped at all, the rest period afterward still matters and should not be skipped to save time just because the wrap already sped up the stall. A foil-wrapped cut in particular benefits from resting still wrapped, or transferred to a cooler wrapped, so the moisture trapped during the cook has a chance to settle back into the meat rather than pouring out the moment it is unwrapped and sliced.
